Cognac is a variety of brandy produced in the wine-growing region surrounding the town of Cognac from which it takes its name. The region authorized to produce cognac is divided into six zones, including five crus. The wine is very dry, acidic, and thin, "virtually undrinkable", but excellent for distillation and aging. It may be made only from a strict list of grape varieties, if it is to carry the name of one of the crus then it must be at least 90% Ugni Blanc, Folle Blanche and Colombard, although 10% of the grapes used can be Folignan, Jurançon blanc, Meslier St-François, Sélect, Montils or Sémillon. After learning about the methods of distillation, enjoy the visit and tasting in one of the most famous Cognac 'houses' to learn all there is to know about the making of this unique beverage. Then, enjoy some free time in the town of Cognac for lunch. In the afternoon, transfer to the Loire valley region.

DAY 5 CASTLES OF CHENONCEAU & AMBOISE / WINES OF VOUVRAY - PRIVATE
Breakfast at your hotel.
9.30am pick up at your hotel. This morning depart for the visit of some of the most beautiful castles of the Loire Valley: Chenonceau and Amboise. Begin your day with the visit of Chenonceau. Property of the Crown, then royal residence, the Castle is an exceptional site not only because of its original design, the richness of its collections, its furniture and its decorations, but also because of its destiny, since it was loved, administrated and protected by women, who were all extraordinary and who, for the most part have marked history. Here, enjoy a private guided tour of the castle. Then discover Amboise. Constructed in the 11th century by the Count of Anjou, the chateau that we now see is a substantially modified building, having been converted a defensive castle to one which was comfortable to live in. The first great wave of changes came in the 15th century after it was seized by Charles VII. It was Charles VIII who embarked on the most ambitious reconstructions, at the end of the 15th century, giving rise to many of the fine renaissance characteristics that we see today. Unfortunately he also died at the castle when he banged his head on a lintel! Francois I followed as it entered its golden era. Equally interesting, the castle at Amboise was the first to have gardens laid out in the formal style that came to be known as 'French style gardens'. Enjoy a visit of the Chateau and then head towards the Vouvray wine producing area. The Vouvray appellation (AOC) is dedicated almost exclusively to Chenin Blanc. The wines of Vouvray are characterized by the grape's natural high acidity and can exhibit notes of honey, nuts, ginger, fig, apples and white flowers. Vouvrays are often paired with rich, hearty dishes and flavorful sauces. Enjoy visits and wine tastings in carefully selected wineries.

5.30pm return to your hotel in the Loire Valley and night at your hotel.

DAY 6 WINES OF BOURGUEIL & CHINON / VILLANDRY GARDENS / AZAY LE RIDEAU CASTLE - PRIVATE
Breakfast at your hotel.
9.30am pick up at your hotel. This morning the wine regions of Bourgeuil and Chinon are on your program. Bourgueil is an AOC appellation of the Loire Valley that is situated on the right bank of the River Loire. Bourgueil wines are made from Cabernet Franc grape variety, but up to 10% of the wine can also be made from Cabernet Sauvignon grapes. Limestone soil produces wines with a dusky red hue, whereas those grown in siliceous soil take on a redcurrant shade. Bourgueil wines have a floral and fruity bouquet, which becomes earthy as the wine ages. Then, discover the wines of Chinon. They are typically dry and light to medium bodied and go well with food. In good vintages the red wines can be cellared for 10 years or more. Visit and wine tasting in selected wineries of both appellations. In the afternoon, discover two major sights of the area. Begin with the gardens of Villandry a reconstitution of a 14th century French garden based on ancient texts. These gardens are divided into four terraces: an upper terrace with the Sun Garden (created in 2008), followed by a terrace with the water garden surrounded by a cloister of linden trees, followed by a terrace with the decorative, embroidery, garden with sculpted box hedges and yew trees in the topiary style, and finally a lower terrace with a decorative vegetable garden. Then head to the castle of Azay le Rideau. Built in 16th century in a lovely setting on an island in the River Indre, the castle was one of the first of many Renaissance chateaux to be constructed in the Loire Valley. There is great attention to detail in both the interior and exterior of the chateau, which has numerous impressive features. Here, you will follow a private guided tour of the Chateau with your own personal guide.
